doc: extend lspclient documentation

This extends the documentation of the lspclient plugin in the documentation.

It is still WIP since it would be nice to include the settings.json directly in the documentation, but the "usual" include approach did not work out. So if someone has a way/idea to make that work, otherwise a copy-and-paste might be a last resort (but obviously rather not).
