Easy enough. I've tried with the "format while editing" both on and off, as well as just using the menu option. I tied to assign a hotkey but that doesn't seem to function at all. You can store a single keystroke but as soon as you try to press CNTL, OPT or CMD it just clear. I feel like i'm missing something very basic here. I'm just not sure what?

This works when the same tracks are e.g. m4a with the same file naming pattern.
Is this a known issue? I've been using 1.0.3, but I see the same issue in 3.0.2.

The help file specifies that any frame name could be used, so I tried both %{disk} (the mp4 frame name) and %{Disk Number} (the unified name), to no avail.

program open. But if I quit Kid3 and reopen it, the Publisher tag becomes
unchecked. I've tried it alone and in conjunction with other tags, but
this is the only one that I have tried that won't persist after quitting
the app. For our particular use of this program, it is important to always
have this tag showing. So for now, I am just instructing users to always
add it manually. But it would be wonderful if you had the time fix this.

When I try to open a directory, I can browse to it, go down into folder tree on the share, but when I select the final folder and click open... nothing happens, no files in left pane, no error message ??!

Automagic Qt detection could be fine on binary distros, but can cause problems on source-based ones like Gentoo.
