lspclient: add jsonc to default config

before anyone asks just making the json config highlightingModeRegex also accept jsonc doesn't work because then it wont allow comments inside jsonc files so it needs to be a separated language inside the config

also fixed the indentation for the fish language server config being doubled for consistency
