Highlighting/themes documentation: remove references to Kate's flatpak package

Since Kate's Flatpak package was removed from Flathub, the links and references to it are removed.

Now, in the section of directories of theme/highlight files, the Flatpak and Snap packages will be mentioned in a general way, without giving as an example a specific package.
