Update content/docs/build/plasma-mobile/running-apps.md to add information about forcing mobile/desktop UIs per-program

Some people might have use cases (such as tablets that occasionally have keyboards or mice plugged in) where being able to change which UI a program uses might be helpful to usability. This simply documents details from a small IRC discussion to this effect.
