Don't manually mess with message charsets when composing in unit tests

Volker Krause requested to merge work/vkrause/dont-override-composer-charsets-in-tests into master

No application code does this anymore as it's all Unicode nowadays. This will then allow cleaning up leftover code and API for manual charset control.
