Draft: flatpak: Improve Category navigation performance

Draft because without https://github.com/ximion/appstream/pull/441 it crashes.

It's a shame because it would have been great to backport this.

Test plan: using --backends flatpak, make sure that applications get listed properly in their respective categories.
