Rename plasma-activities logging category file

kde.plasma.categories is too generic and doesn't match plasma-activities-stats pattern

Related: frameworks/extra-cmake-modules!408 (merged) (with current ECM version, kde.renamecategories would be created, which conflicts with kdebugsettings)
