VolumeMonitor: Don't set stream on source output monitor

There's no way to set a monitor stream on a source output, set_monitor_stream only takes a sink_input_idx.

There's also no point since by monitoring the device the app records, we know what the app will hear.

I looked at pavucontrol and that's what it's doing.

I can see me speaking under the "apps" tab now but only on the app that uses the right mic. (Please test this with multiple mics, I just tried with 1 app on headset + 1 app on monitor of output, not with 2 actual mics)

Should go into 5.24 imho.
