Temporarily disable assistant component in qttools

Currently, in Arch Linux, if you have installed lighthtml package (and you do, because it is dependency of qt creator), you cannot build qttools (a module from qt6-set) because of an issue https://github.com/litehtml/litehtml/issues/266

This commit temporarily disables building of assistant component, so users could actually build qt6-set.
