Add documentation for Color Themes

Documentation for color themes is added, as noted here.

The content of "Fonts & Colors" is moved to the new "Working with Color Themes" section. It groups together the documentation for the theme JSON files, as well as the theme editing interface.

I would greatly appreciate the review of the wording and technical concepts. Also any other suggestions or corrections!
